Organizing Your Home Kitchen Like a Professional Brigade

Efficiency is everything, and chaos is the absolute enemy. When I’m running the kitchen, my team relies heavily on the classical French system known as *mise en place*—literally, 'everything in its place.' This structured discipline is exactly what keeps a high-volume line operating smoothly during a frantic rush. But you don't need a commercial kitchen to benefit from this. When I make the drive home  and step into my own kitchen to cook for my family, I use these exact same principles. Transforming your home cooking from a stressful chore to a seamless, enjoyable experience is easier than you think.

**1. The Full Read-Through**

Before you even think about turning on a burner, take the time to read your recipe from start to finish. I can't stress this enough. You don't want to be halfway through searing a beautiful piece of meat only to realize your sauce needs 30 minutes to reduce. Gather every tool, pan, and ingredient you will need. Think of your counter as your command center.

**2. The Power of Prep Bowls**

Next, get to chopping. Mince your garlic, dice your onions, slice your proteins, and measure out your liquids. Place everything into small, individual prep bowls. Imagine the panic of scrambling to mince garlic while your onions are already scorching in a hot pan—we've all been there, and it ruins the vibe. By doing this upfront work, the actual cooking process becomes a smooth, enjoyable dance rather than a frantic sprint. All you have to do is toss ingredients into the pan when the time is right.

**3. The 'Trash Bowl' Secret**

Here is one of my favorite industry tricks that you can use at home: the dedicated 'trash bowl.' Keep a medium-sized bowl on your counter right next to your cutting board while you work. When you're peeling vegetables for Enzo's favorite side dish, trimming fat, or cracking eggs, all the scraps go straight into the bowl. This simple trick saves you dozens of disruptive trips back and forth to the garbage can across the kitchen, keeping your focus strictly on the food and your workspace immaculately clean.
