Anthocyanins and The Mirror Test
My dad used to tell me to look for the "mirror" when working the produce bins. The eggplant's signature deep purple color is dictated by a potent antioxidant and anthocyanin pigment called nasunin.
The Shine: The skin must be highly reflective, taut, and perfectly smooth. You should almost be able to see your reflection in it.
